Moody Tongue defines its style as “culinary brewing,” a new genre that forges a connection between brewing and cooking. These beers share many of the flavor and aromatic characteristics found in wines and ciders, but are balanced with a variety of hops and malts found in traditional beer styles.
Great beers come from great ingredients. We pair simple, balanced ingredients with familiar recipes that won't overwhelm the palate as the base of our beers. Then, we create innovative flavors that build upon popular beer styles using culinary techniques such as steeping tea, baking chocolate, brewing coffee and brandying fruit.
The Applewood Gold is a beer true to its name in both hue and excellence. We crafted this beer with sunshine in our minds - making its body light and vibrant enough to enjoy throughout the night, and well balanced to pair with a wide variety of food from smoked salmon to grilled sweet Midwest corn.
Sliced Nectarine IPA
The inspiration for thsi beer came in the form of a summer farmers market and the abundance of fresh fruits and produce. Every nectarine is sliced by hand to release the fullest amount of flavors and aromatics. The resulting IPA showcases a bright tropical aroma of stone fruits that balances the grapefruit acidity of the Chinook hops. The beer's crisp profile refreshes and delights the taste-buds and craves pairings such as slow-roasted pork shoulder or a slice of warm peach pie.
Steeped Emperor's Lemon Saison
This lemon combination highlights intense flavors and aromas that are balanced by the acidity and fruit flavors of the Saison yeast and Sorachi Ace hops. We use a double-steep process to showcase the lemon profile, and the resulting Saison highlights flavors of lemon meringue pie with aromatics of a Meyer lemon peel. The beer can be paired with lighter seafood dishes such as grilled shrimp or sauteed scallops or after dark with a lemon tart or lemon sugar cookie.
Caramelized Chocolate Churro Baltic Porter
Big flavors do not have to be synonymous with one-and-done beers. We love dessert just as much as we love dark beer and we think that enjoying more than one of either should never be a problem. In this medium-bodied Baltic Porter we use a combination of specialty malts and caramel to capture,caramel and vanilla alongside lager yeast that brings a clean finish. This Balatic Porter and pairs well with dishes such a chocolate mole or caramel flan.
Bourbon Barrel Aged Chocolate Barleywine
Bourbons and English barleywines often share complementary notes of toffee and caramel flavors, so aging our first barleywine in Woodford Reserve bourbon barrels seemed a natural direction for this beer. The barrels impart a touch of vanilla and oak, and with the addition of Oaxacan chocolate our finished beer sounds more like an indulgent dessert. Like a fuller-bodied Napa Cabernet, our barleywine achieves balance during its twelve months in the barrels. Once mature, Bourbon Barrel Aged Chocolate Barleywine can be paired with butter pecan gelato or bananas foster.
Shaved Black Truffle Pilsner
Created with premium Australian black truffles hand-shaved by Brewmaster Jared Rouben, this German-style Pilsner's armos combine fresh black truffle and baked pear with subtle notes of toasted pilsner malt. The flavor profile marries that of a traditional German-style Pilsner with one of the most sought after culinary ingredients in the world.
