Based at the Cider Shed on South Belton Farm in the heart of the East Lothian countryside, Thistly Cross is a collaboration between farmer, Ian Rennie, and artist-turned-cidermaker, Peter Stuart, in 2008. From pressing the Scottish apples and fermenting with the finest blend of Champagne yeast to maturing the cider for at least six months to achieve that rounded, smooth taste, Thistly Cross has gained a reputation for making ciders that people rave about.
Refreshing, lightly sparkling with a long maturation to give a smoother complexion than most commercial ciders. Great head for a bottled cider. Clean light nose with a crisp, crunchy palate. This a well-balanced cider with easy apple flavors.
A medium sweet cider with a bright golden color. Smells like a very pleasant Ginger beer. Soft mouthfeel with ginger dominating the palate due to the infused blend of fresh root ginger, pressed on our apple press. A well-balanced, full bodied and refreshing cider which should united ginger lovers world wide. Perfect for a refreshing summer drink or warming winter tipple.
The fresh fruitness of apples combined with the heavy citrus zest of elderflowers gives this cider a unique aroma and warm caramel color. Spiked with real elderflowers, the pungent astringency bestows a rich, complex flavor laced with fruit noes. Classic pear esters underpin subtle floral sweetness.
Whiskey Cask Cider
A flavorsome cider made potent in the oak of a Glen Moray whisky cask with lingering tastes to be savored. A gentle whisky flavor initially intermingles with subtle, medium dry cider, giving way to the distinctive full bodied flavor of the cask with finishing overtones of whisky. This cider offers all the flavor of the cask whilst keeping the light, fruity aspect of all the Thistly Cross Ciders.
